Give your little ones the perfect sweet surprise with these fab cupcakes, which come from Cupcake Belle‘s Secret Recipe Book! Hide their favourite sweeties inside and serve them as a special party treat. Here’s how to make them…
Cupcake Belle’s Sweetie Surprise Cupcakes
For the cupcakes:
- 125g unsalted butter, softened
- 125g caster sugar
- 2 medium eggs, lightly beaten
- 1 tsp vanilla extract
- 125g self-raising flour
- 2 tbsp milk
For the buttercream:
- 100g unsalted butter, softened
- 200g icing sugar, sifted
- 1 tsp vanilla extract
- 1 tbsp water
- Your favourite sweeties
Special equipment: Star piping nozzle, piping bag, small round cutter.
1. Heat the oven to gas mark 5/190ºC/3750ºF and line your cupcake tin with paper cases.
2. Beat the butter and sugar until they look soft and fluffy.
3. Beat in the eggs and vanilla extract.
4. Fold the flour into the mixture, then add the milk and stir it in well.
5. Spoon the mixture into the cupcake cases and bake the cakes for 12 to 15 minutes until they look a light, golden brown.
6. Cool the cakes on a wire rack, then place them in the fridge for an hour to firm them up.
7. For the buttercream, beat the butter until it’s soft, then sift in the icing sugar and beat it in well. Add the vanilla and water, then mix again.
8. Remove your cupcakes from the fridge and cut a hole out of the top centre of each one using a small round cutter.
9. Fill the hole with the sweeties of your choice – the more colourful the better!
10. Pop a star piping nozzle into a piping bag and spoon in the buttercream. Hide the sweeties and cover the top of the hole by piping a star on top.
11. To do this, hold the bag and nozzle at a 90º angle to the top centre of the cake and squeeze on the bag to pipe a star. When you’ve finished, stop squeezing and pull the nozzle up and away.
